Q: How do I attach this to brick? In the mortar or the brick itself and what type of anchors.

Where possible, in the morter. I recommend a sleeve anchor. Avoid a wedge anchor or Tapcon screw

Q: What should the depth of the threaded anchor bolts be?

I don't have a certain answer, I suppose it depends on the load on the bracket. I am using 1" lags but thee is not much load on the posts (think tree house)

Q: Installation says to cut a 3/16" slot for the knife plate. A table saw blade is only 1/8"?

You can creep up on it to achieve the 3/16" needed.
