Q: Do these cut stainless steel better than the regular Midwest offset snips? Is it worth the extra money for the hardened blades?

They don't necessarily cut better, but they keep their edge much longer.

Q: no one has said a word about cutting stainless steel, how are they for that and at what gauge?

There is a chart that says 18 gauge at the bottom of the page, but in my experience these things are not as specific or definitive as they seem. I'm not sure how helpful anyone can be, but I'd use that 18 gauge as a rough guide. I have had them for almost two years now and the first thing you will notice is that they are extremely smooth even with stainless steel, if we are talking about sheet metal. Compared to cutting wire, once you are able to start the cut, it comes down to the hardness of the metal vs the hardness of the blade, and starting relates to the sharpness of the blade. If the blade is harder and the blade well sharpened (smooth), a continuous cut is not going to do much if anything no matter the thickness, as all it has to do is slice. These snips do not twist and open up, because of the way they are made and therefore it is easy to start a cut. So I would suggest very cautious trial and error, with sheet metal. You probably aren't going to find a snip/shear type tool that will cut better or thicker material than these. That said, there are other ways to cut sheet metal, with guillotine and other type tools, if you want a straight cut, and, also, hack saws, jewelers saws, etc. If you want more info, maybe just call the manufacturer and talk to someone.
