Q: Can these bands be used to take some resistance while doing pull-ups?

If you have something to clip them to they can.

Q: Are these any good for leg extensions?

They are, but you have to think of them more like cable machines. I'm using them for a deadlift and a single leg rise. In both cases you tread on the band, hold it with both hands, do an upward movement. It is a bit different to weights in that the band pulls your body down and your muscles are working against the pull rather than pushing against a weight. I've been watching a weight bands training series on YouTube by James Grage. He shows and explains how to use them.
