This is what I expected!!!

I soaked before cooking as direction indicated . Kernel skin did loosen until after I cooked fully The kernel skin very unpleasant. Took time to peel each kernel

Using this produced a pleasant surprise result once cooked, fermented, refined, & barreled. So, now it is a regular in our endeavor.

This is not hominy, which has to be treated with lime water or caustic to remove the tough outer skin of the kernels.
