Portion size pre-made: 12 oz/1 cup I let the water come to a rolling boil. Based on previous reviews, I stood right next to it and stirred. According to my stopwatch, it took less than 3 min. to finish how I like my pasta: not al denté but not mooshy either. This was perfect timing. So I suggest you watch it - it doesn’t cook like regular pasta. I’m not gonna lie: I’ll never tell you it’s exactly like semolina noodles, which we Americans are used to consuming. But if you’re looking for a healthier alternative and want to avoid spikes in your glycemic index, this is a delicious alternative. I’m not sure how it would do in casseroles and salads - I added my sauce and quickly ate it because I did not want it to absorb the liquid and fall apart. If I ever expiremented, I think I’d keep it separate and stir it in right before serving/eating. IMHO it wouldn’t hold up for any length of time - say, like in a potluck situation.
