For this lard are selected spotted the large size lard, without depriving them of lean; which are salted in special tanks salting with salt and a mix of spices including garlic, rosemary, pepper, nutmeg and clove; the first part of the salting is dry and lasts about three weeks; then brine is added to the mother, which is none other than the brine coming from the previous salting.
