Better than rolling sharpeners!
Better than rolling sharpeners! Simple to adjust to the recommended angle, the Mitsumoto Sakari sharpener has put the sharpest of edges on my knives in just a few minutes and only 5 or 6 passes of the blades across the sharpener. How do I know? The wrinkly tomato test! Paper-thin slices achieved effortlessly. I have searched for years for an effective sharpener and this, to my utter delight, is it.

I have had this sharpener for only a week so durability is unknown. I am the only user. Have used it on all my 'sharp' type knives with excellent effect, & keep it handy to use frequently, mainly now only to hone, after finding the correct angle & sharpening each knife. All behave well at the 18 degree setting which I will now adopt as their status quo, never having the original maker's figure. After honing with a few strokes, the blades all pass the 'single sheet of paper' test, perfectly sufficient for my culinary & jobbing needs. Scissors too, both large & small. Having extensively studied Form on all types & prices of sharpeners, this one is very simple to use as the angle setting works simultaneously across all the Vee's so having decided the angle, there's no fiddling with resetting. Seems well made & sturdy for a manual machine, in spite of some criticism by others. And I like genuine Japanese workmanship - blade knowledge & manufacture in particular - & think the higher price worthwhile for a working tool, rather than a fetishist's hobby fulfillment, or an industrial kitchen's necessity ! It works well on small straight bladed pocket knives. Cons: Setting the markings on the protractor with some unmarked fixed point on the body was a puzzle, but easily solved by a mark of Tippex above the white mark, which does not look like it's the mark point for angle setting. So far, I am very pleased, & there's not much to go wrong if the stones are kept clean & correct pressure is applied.

Excellent sharpener for Global knives
Fantastic knife sharpener. I used this on my Global knives which have a fifteen degree angle. They had become very blunt but 10 pulls through the first slot restored each knife to razor blade sharpness. The sharpener is robust and very easy to use. Highly recommend this item.

Good purchase
Over the years have tried a number of knife sharpeners both mechanical and powered. This is without doubt the best and easiest to use. Prior to this i used the Work sharp powered sharpener which, whilst effective, does entail swapping abrasive belts and only has two angle guides. Will still use the work sharp for garden tools but this is the one for kitchen knives and scissors. If you have very expensive kitchen knives then possibly a wet stone and strop is better but for average knives this will do.
