A little costly, but the performance is great
I am far from a culinary expert. My daughter loves her Hexcclad pans and we needed a small pan to support her cooking skill. Filling the clean up roll, I find these products perform fantastic. A quality dish soap and light scrub brush clean up the mess easily and it is good to go. The heat spreads evenly across the pan and fills the bill for our cooking needs. The Terrabond coating is supposed to not leach like Teflon and I hope that holds true. As far as metal utensils, a knife will cut through the coating so use care. Purchased to support both gas and future induction cooking. Satisfied with the performance. Strong recommendation from a rookie cook.

Daily use, with oil, improves performance.
I really thought i messed up. All that money for this pan, and eggs stuck! Well it was only the first day. I seasoned it with some canola oil, heated it up and tried it out. I hate flipping eggs on a good day, and this was NOT a good day. Stuck to the bottom, even with small amount of oil. But i really needed a pan, and, like it or not, it was going to get used hard, every day for breakfast, and sometimes dinner, too! Bacon, sausage, fried potatoes, hamburger, steak, and the eggs. I give up, i just help them with a spatula and steam with a little water. Did that even with a nonstick pan. So i guess i couldnt complain. So, as it turned out, all that greasy food has done a good job seasoning the pan, and i can still use the plastic spatulas and not scratch the surface. When im done, deglazing the pan, and wiping it down cleans it up well. Dont use soap, or youre back to square one. I have a few little grease stains on that nice stainless edge, cosmetic, from pouring out excess oil before cooking. Scrambled eggs pull easily off the pan, nothing gets really stuck, like the first day. It pays to use the pan all the time, and this 12in pan just might last longer than the nonstick ones ive gone through every year, and that would be worth the $200. One thing, like if youve cooked up some meat, like bacon, etc. and you plan on putting eggs next in that pan, deglaze the pan with small amount of water to bubble off all that sticky stuff. Then pour in the eggs and they wont stick at all! Daily use for 2 weeks, and it seems like its broken in. I havent tried an omlette in it yet. I may just chicken out and get another nonstick for omlettes. Next im gonna try the titanium pan, see how that works! Meanwhile we will see how long the hexclad lasts. I thoroughly expect this pan to last me years, which is more than i can get out of the average nonstick! I go through one of those a year. And at $50 a pop, its getting old. If this pan, "pans out", i may get the hexclad wok, next! Update, the more i use it, the more nonstick it gets! This pan is a real workhorse!

Literally, the best pans on the market.
I had read so many reviews before deciding to purchase, and I came to one conclusion from so many people writing bad reviews — you all don’t know how to cook! I have cooked fish, seared a steak, cooked scrambled eggs with cheese, poached an egg, fried bacon, made a bourbon reduction sauce with molasses and the consistent result from all these — everything was cooked to perfection and literally slid right out of the pan. I wanted to try these particular pans because for so long I’ve used Lodge cast iron pans. Don’t get me wrong my cast iron pans are amazing but the constant maintenance can be exhausting. The Hexclad pan is being promoted as a hybrid of stainless steel, the durability of cast iron, and completely non-stick. They didn’t disappoint. Plus they’re so much lighter than my cast iron skillets and cleanups are a breeze. Let me give anyone who reads this a few tips: #1 Follow the directions given in the package. #2 Please, put a buffer between what you’re cooking and the pan. I use beef tallow, lard, or ghee. And please whatever you do, stay away from seed oils. Not only are they extremely unhealthy for you but their high heat points can’t cut it like natural fats. #3 Cook on low to medium heat. You won’t be disappointed and you’ll be surprised at how well these pans heat up. #4 When using any stainless steel utensils, don’t dig into the pan or use a fork with the tines down scraping the bottom, or doing the same thing with a knife, or ….. you get the point. See what I did there? Point? And lastly #5 …… refer back to #2 and you won’t go wrong. Watching some of the videos where someone is cooking scrambled eggs without a buffer — what did you think was going to happen!? SMH Happy cooking! Update: I have used this pan for just about everything and I absolutely love it. It has literally became my favorite pan. Cooking is fun once again and the food tastes better. The ergonomics of the pan handle helps as it stays cool. But don’t put your pan in the oven at 500° and then grab it by the handle because your’re itching for a burn you don’t want. This pan is a little heavier than what most of you are use to with your Teflon pans; that’s because they’re made from quality materials. I am disappointed they’re made in China, but they are designed and planned here in the US. So the reason for writing this update is, and as I stated earlier, I really love this pan. So much so I purchased the complete set. Everyone has their own set of pans they love, and all I’m doing is giving you my two cents worth. As of right now 11.21.2024, Hexclad has their Black Friday sale. Check them out as you won’t be disappointed. Happy cooking!

Expensive Pan Sticks and Warranty is WORTHLESS - Customer Service is a Joke - BUYER BEWARE!
I bought this pan with high hopes based on its many good reviews, and figured for $100, it should be pretty good. Well, fast-forward five months. I have been using the pan and find that as often as I season it (which involves heating the pan with avocado oil), cleaning it with soft pads, and running it through the dishwasher, MOST THINGS STICK. It does OK with scrambled eggs, but fried eggs (at a low temperature) just leave me with "gunk" that is really hard to remove. I've attached a video. I contacted the company via their very attractive website. I started by filling out a form, which never seemed to be transmitted. It just came back with "submitting." I then went back to the website and saw you could contact them via email. In my first email, I described my problems, attached some videos, and included my Amazon receipt. They quickly replied with an email about how sorry they were that I was having problems, but they said I needed to go to the seller to get a refund (I did not want a replacement). I got back to them, pointing out Amazon has a 30-day refund/replacement policy, and they - the manufacturer - should make good on the warranty. I went back and forth with them several times (all with their ending emails expressing how important my satisfaction was) and then just gave up. They were not at all helpful. THEIR WARRANTY IS USELESS—THEY DON'T WORK TO MAKE GOOD ON IT. I sent them several videos (one seen here) that clearly show the problem, and they eventually said they need clear photos in good light, etc., etc., so that their staff could review my situation with possible solutions. It's just a run-around! A decent company would value its reputation and try to make the customer happy—NOT THIS ONE!! I feel like I wasted $100 on a pan. I EXPECTED BETTER!! Really a disappointing experience. Maybe their pans are good (they should be for the price!), but they really have crummy customer service. Lesson I learned is that companies are like restaurants where good food can be ruined by bad service. This is one of the worst experiences I've ever had with customer service - I would have been happy with my money back or at least an offer of a replacement out of the gate rather than an endless set of scripted (and unhelpful) emails. They botched this big time! BUYER BEWARE. If your pan is not good, return it quickly - otherwise, you may be stuck with it. PLEASE SEE OTHER REVIEWS THAT INDICATE THESE PANS LOSE THEIR NON-STICK FEATURE QUICKLY. There are good pans out that cost much less and really are non-stick. AVOID THIS BRAND!!

A little pricey but worth it!
So far so good. This is an excellent egg pan. With little lubricant, nothing sticks. easily washed. Heats well. Very sturdy. Feels like it will last a long time. Recommended if you can afford it.

So far my best frying pan!
This is an attractive, well-made pan. It is easy to clean, and the meat sears nicely. A little expensive, what you get is what you pay for. I would definitely repurchase this frying pan. It looks like it will last me a lifetime. I haven't tried frying eggs in it yet, but after watching some videos, it might be trickier than in some other nonstick frying pans. As for frying eggs in this pan, it's based solely on the YouTube videos I watched. As for meat, I really like this pan.

Good but may not be worth the hype
Its a well made Pan, but its certainly not the most amazing thing since sliced bread like its marketed. Dont expect that it will be non stick no matter what you cook. The lip of the pan gets super hot and due to its design, it will burn you very easily. Overall its an ok Pan for the super premium price.

Great kitchen tool
I've really enjoyed cooking with this pan. Mostly on the stove top with propane. It cooks evenly and a steak comes out beautifully. It's great for any kind of meat cooking and then a lot of times afterwards what I'll do is put in the ingredients to make a red sauce so that I capture all of the flavor of the meat that I just cooked. Very easy to clean up haven't had problems with anything sticking or leaving a glaze like some pans do
