How long will the caseings store for?

Can't remember officially but I have kept them for a long time !

Any idea on how can I stop the sausages splitting when I cook then?

Underfill them slightly as they expand when cooking and prick them to let any air out. I also cook mine on a tray liner to help with sticking.

Are these casings gluten free

I would say YES as it would need to be on an ingredients declaration, I have made them for people with Gluten intolerance with no side effects. Natural casing are best for larger sausages, these are ideal and easy to handle for smaller sausages.
