Does the Led light set come with 1 or 2 lights?

This is a key light, not a set, it'd come with 1.

Does it come with the stand? or is it just the light?

Comes with the pole mount, the power supply for the light, the light itself and the quick start guide.

How dim will this light go? For some applications, I don't want it to be too bright.

Very dim, you won’t have a problem finding the perfect balance.

Is the wifi connectivity reliable? I have had problems ...

During initial setup yes, so I linked mine to my network , unplugged and then replugged in . Otherwise connection has been perfect
