Can the dual stand support a 34" Ultrawide and a 27" 16:9 in portrait at the same time? Thanks.

Yeah it can. I've got an Asus PG348Q and a pg279q in portrait on these. Works fine but you just have to tighten up the arm that stops the monitor from tilting forward. I found loosening it before tightening it fully helped.

can I only use a single arm until I get a second screen ?

In theory yes but it’s not ideal. I’d be concerned about the arm mount being unbalanced and putting strain on to the part that fixes to the desk. It would have to be off centre (right or left) and you could counterbalance the monitor. You could also bend the arm to make the single monitor central, but it would protrude at least 25cm than is necessary which is not very practical.
