This is as close to real mozzarella as I have found. In addition, it actually melts if you follow the directions. I have been vegan for over a year and am constantly in search of a cheese substitute. I will say, i do not think this tasted bad at all, it simply didnt have much taste. What I did like about it is that it does melt in a very similar way to actual cheese. It needs to be melted at about 500 degrees for 15-20 minutes and it really does melt and even get that browned natural cheese look and texture. I made a pizza with it and used a lot of basil which obviously burned at 500 degrees so i would recommend putting herbs or veggies towards the end once the cheese is melted and lowering the heat. Another recommendation is to add salt at the end in order to add some flavor. This product is not bad, just remember it is a substitute and does not taste like real mozzarella cheese. What it does do is melt better than any other vegan cheese I have found and have a very authentic look.
