You have to check your water pan anyway, so unless your outside weather is very cold or windy, you won't loose that much temp. or smoke. I usually stick with 10-12lb turkeys and get as close to equal weight as I can. **Q: What size turkey will this hold?** A: I don't know the largest it will hold, but I smoked a 16 pound turkey last Thanksgiving in it, and there was room to spare on the sides and top.
