Hot. That front of the mouth heat that builds into a slow burn. Very different from Western chilis. The flavor is so meeded for Thai dishes and any other asian dishes. Won't regret this purchase. They have great flavor and we use them in a lot of our dishes but I was hoping for more heat from them. I am guessing these are on the lower end of the scoville spectrum for birds eye peppers. I started with just a little for heat and flavor and even my kid who thinks everything is spicy loves these.
