表面の触り心地からして違います、もちろん定石として他の研石で荒研〜仕上げまではやった上で使わないといけませんが鏡面仕上げと言って良い仕上がりと触れるのも危険なぐらいの素晴らしい切れ味になります、研石自体は結構硬いので長持ちすると思います 販売元の研石愛を感じる文書も付いてきて良いですね

とっても滑らかでゴシゴシしなくて良いので、指が痛くない指で軽く押せば刃先が滑らかになる。糸刃は3000くらいで付ければ料理では使いやすくなる。切刃は鏡面になる。
