This is my favorite brand. The texture is just like “regular” pasta. The taste is “normal” too. After bariatric surgery, I thought that I could never have pasta again. This brand, has made my soul happy. I can eat a small amount of it and still hit my protein goal and hit below my carb count too.

I want a lower carb “pasta“ that’s closest to regular tasting pasta. You probably won’t find that, but you can come close. I don’t think these noodles have much flavor (which is good), maybe if you don’t put anything on them but it’s subtle and not strong. But the flavor is not bad. They cook quickly and they get fairly tender like regular spaghetti does. 8 ounces makes a lot, more like five servings to me, which is about one and a half ounces per serving. So one and a half ounces would be less than nine net carbs a serving. That’s a far cry from 30 and 40 in others. The dry noodles are rather fragile so you have to be careful pulling it out of the bag because they are very brittle. I like to snap mine into to make shorter strands for eating. I love that they don’t take long to cook as opposed to other low-carb pasta that takes 15 to 20 minutes. I wonder why other brands are more white and this one is more green. So I would recommend this to go in any dish, even just putting pesto and Parmesan over it would be good. Of course you’re gonna pay a whole lot more than the cheap pasta in the stores. But I think it’s worth it and I’ve seen other low-carb pastas that were much higher. So I recommend they have subscribe and save to boot.

Overall taste is fine. It is a good alternative where the carb count may still be higher but the protein values are high as well. It is not a "true" spaghetti noodle consistency but a little bit goes a long way. For those struggling with better nutritional value but wanting a spaghetti product, I find that it is a good substitute. I stumbled onto Edamame in salad medleys and they have a good taste. I would buy it again and also explore other high protein plant based products. It's too bad that more grocery stores don't have these options.

I'm not sure how they do it but The Only Bean pasta is texturally a good substitute for wheat pasta with a mild taste that goes with any sauce that you may wish to use. I've made carbonara, bolognese, and old fashioned marinara. This is a very good "sauce delivery mechanism" while providing tons of good protein and fiber. I recommend it to people who want to eat clean and still enjoy their food.

The Only Bean edamame spaghetti is a healthier alternative to both rice and pasta. A good choice if you are concerned with blood sugar issues. While having half the carbohydrates and significantly higher fiber and protein it tastes like spaghetti and cooks in only eight minutes. Try it, your pancreas will thank you.
