I’m assuming a cast-iron pan on a traditional gas stove on high exceeds this. Problem?** A: The Frywall rests against the inside wall of the pan, about an inch above the cooking surface. The latter rarely exceeds 375F-400F, the temperature at which most cooking oils begin to smoke and burn. You do need to be mindful of keeping your pan centered over the burner, however. If the flame licks up around the edge of the pan and comes into direct contact with the silicone, the Frywall can get damaged. **Q: trying to find one to fit my 15 inch Lodge cast iron..... any chances this would work?** A: This becomes a materials science question. The Frywall is obviously designed to be in direct contact with the wall of a skillet, but when I use mine, it doesn't touch the bottom surface. I would not assume the skillet wall and bottom have the same heat energy in them. I'd reach out directly to the mfgr.
