What is the difference between the regular package and the package that says "Sin Capas Plasticas" at the top?

It's a packaging gimmick. Nothing to make any difference in taste."Con Palo" means it's manufactured with the plant's stems. Which is very common. It doesn't make it any lesser quality. If you drink mate with bombilla then "con palo" helps the bombilla from clogging. For teas, if you're going to steep the mate, then sin palo would make more sense.There is a difference in taste between the "con palo" o "sin palo" but it's a matter of taste, not quality.Sin palo will cost more due to the process cost of removing the stems.Hope this helps.I had bought 1/2 of cruz de Malta for $11 from amazon. But I found my local Mexican market, and just bought a kilo for $12, so try your local Latin market if there's one around. Debatable. It is known that Maté contains Theobromine an interesting compound. Overheating it changes it to caffeine. If you cannot drink your Maté immediately after pouring in the "hot" water you're probably drinking a more caffeinated form of Maté.

There are studies about Maté stating that when consumed the central nervous system is boosted without the cardio system boost. Caffeine is in stark contrast to this.

Is your yerba mate organic?

It doesn't need to be. Organics can be worse than non organic. 
Anything that is organic can be used as a pesticide. These can be very bad for you, as you know, many toxins and poisons exist in nature. 
Don't let that deter you from this product, it's the one of the best Ilex Paraguariensis teas you'll find.

Does the product you received seem fresh? I know, with mate it can be hard to tell. Is there a freshness date on the package?

Never bothered to look for freshness dates. It has always been (Cruz De Malta) best quality and I do not believe mate can get stale.
