My instructions got thrown out ... what is the purpose of the gap on each of the dishes? And what is the metal for at the back of each dish?

The gap is so when you're using it to keep food warm and are serving from it you can put the lid on whilst the serving spoon remains in the dish. The metal at the back of each dish is to hang the lid on whilst you're serving and then you can put it back on the dish when you're done.

can you use the liner in an oven?

I do not think so, however check with the instruction booklet or the manufacturer. Hope this helps.
