Question 1

The pudding recipe on the box says water cannot touch the bottom of the mold.  Most recipes cay the water should be 1/3 - 1/2 the way up.  Why?

The pudding recipe is for a steamed pudding; that is a pudding cooked in a steamer.  When using a steamer, as in one for tamales or vegetables, a platform is in place above the water on which you would place the puddings in their molds.  The alternative to a steamer is baking the puddings in a pan with hot water 1/3 to 1/2 way up the sides of the molds and the whole thing wrapped tightly in foil to create a steam chamber.  The water, just mentioned, will cause the molds to discolor.  I would imagine that is why it is not a recommended practice.  It does work, but not as well.  You bought a great pudding mold, so now go buy a steamer or have it discolor.  Its your decision.

Do I need to buy an insert to go with Mrs. Anderson's baking steamed Christmas mold?

No you so not have to buy an insert for this baking piece.   It looks like a small bundt pan and makes delicious cakes

If using w. instant pot to make puddings, do i still use the lid? use the cake or pressure feature? add water to the bottom or pass the mold? recipe?

I always use the lid. When you see the water that collected on it you'll know why. I do it on "manual". About 1.5 to 2 cups water. I put the trivet in ups down, just to keep it off the bottom. I find my recipes for puddings online, mostly Pinterest (my board is "IPA: Instant Pot Addiction") or look for a book called "Great British Puddings" by Mary & Debbie Smith. Oh, and solid coconut oil is the perfect substitute for suet.

Question 4

I have heard from my cousin that she had a hard time with sticking with this pan. Any suggestion to make my plum pudding unmold easily?

I just made my plum pudding last night. I used shortening to grease the pan and the pudding came out very easily. Just let it cool completely in the pan, then upturn it over a plate and shake a couple of times.
