I have never owned such a sharp, wonderfully balanced knife as this one. I read about it in Anthony Bourdain's book, Kitchen Confidential. He uses this knife in a larger size. I love the 7-inch size -- it is similar in size to the old, dull knives that I've been using for years. Anthony says you only need one knife, a chefs knife like this one. It really is the perfect knife for absolutely everything. You do have to be VERY careful with it when you first start using it after almost a lifetime of using dull knives. It is SHARP! Razor sharp! Dull knives are not only frustrating to use but dangerous, because of the extra pressure that needs to be applied to cut one's food. After reading many reviews I felt confident about buying this knife. Sure enough, it does a great job with cutting tough root veggies and ever other food item. It feels great in hand, because of its shape and lightweight composition. We love it.
