Can you write something on the scratch sticker itself? Like with a sharpie?

No, you put the sticker on top of what you write. You can write with Sharpie on the item then place this over what you write, when it is scratched off you will see what is below.

does it work over a picture? if I copied pictures to paper and printed it out, put the scratch off on top?

I used mine over words and they worked fine. Using over pictures should work.

Which type of plate do you recommend using?  Glue stick?  Hot glue? Elmer's liquid (kid) glue?

When i bought these stickers i was using them to put on top of a number, that went on a small fortune card i had made up. I use to host parties for my large group of girlfriends and this one was a fortune telling party. The stickers reveled a number underneath when scratched off, to allow the order of who went in first, second, third etc. to see the Psychic medium i had hired to give a fortune reading. The stickers worked really well, it was successful. So that's why i bought the stickers but not too sure what it is you need these for ? These are sticky stickables, so no need for any glue. Not sure where the plate comes in.... pretty sure these are to be used , as i did. If i am not mistaken these stickers are to be used to reveal something underneath, that then would be scratched off later. Hoped this helps you or maybe l am misunderstanding what it is you're really asking !
