Can you set these to turn on and off via touch, instead of changing the color on touch?

Accepted Answer

Yes...as long as you understand you have to touch every light separately.  The tap sequence is as follows:

Red/Yellow/Aqua/Blue/Green/Violet/Light Blue/White/Jump (All Colors)/Fade (All Colors)/OFF

So, you'll likely have to touch each light multiple times to turn it off.  Using the remote control is probably more effective because it will turn all lights off at the same time (provided it's aimed just right), and when you turn all lights on again with the remote the previous pattern/color selection/brightness level will be retained.

Here's a quote from my product review that addresses your question.  In my case I used a standard USB charger to provide power; the seller supplies only the USB cable and lets the user figure out how the lights are to be powered:

The product's user guide doesn't recommend running more than 20 LED modules from the provided power supply (too high of a current draw). I found that when all 10 of modules in the Minimalist Pack were connected, colors like white (which uses all LEDs in a module) didn't look uniform across the set because the power supply was being strained. Adding another 10 modules (for a total of 20) made matters much worse. I ended up purchasing another power supply (adapter) rated at twice the load capacity to fix the color/brightness uniformity issue. Multiple power supplies feeding about 8 modules each could also work, as long as the electrical links between modules were arranged to avoid connecting two or more feeds together.

To summarize:  20 is the maximum number of lights that can be ELECTRICALLY connected together safely, although the visual results may not be satisfactory.  You can, however, link as many as you like MECHANICALLY if you buy additional USB power supplies and are careful to electrically link only 10-20 lights from each one.
