Can you take these on planes?

No you can not. You can not take any canned air on the plane in carry on or in checked baggage.

When I press the button will it automatically stop once a "dose" is delivered or do I control the lenght of time?

Oxygen will continue to dispense however long the trigger is being held for. We recommend taking a deep breath and holding the trigger down at the same time.
