Approximately 1/8'. It's actually a fairly substantial piece of metal.

Do the door hinges unable both doors to sit flush against each other when fully opened?

If the hinges are holding the doors too close together then they won’t sit flush. Back out the hinge screws about a 1/4 turn and see if that lets the doors sit flush. If not loosen another 1/4 turn and see what happens
