Can this be used to render the insides of my fireplace and then fit my wood burner?

Yes. Possibly difficult to get the mixture smooth and soft enough to work easily. Alternatives might be to use quarry tiles or even porcelain tiles which have good heat resistance and point with fire cement, easier to keep clean. Depends much on the state of the existing fireplace and its shape and size.
