Does this come with the thermometer

Yes, it is usually positioned on the side with a magnet. All you have to do is insert it when you wish to use it in an item you are baking/cooking. I just love this double-oven unit. It is the best I've come across!

How far away from the wall does the back vent need to be?

My unit is about 4" away from the wall. No problem.

Does it get too hot to use under upper cabinets

Yes, it is not recommended to place the Ninja DCT451 12-in-1 Smart Double Oven directly under cabinets.
