These are single elephant bulbs. Meaning, that 1 clove is the entire bulb. They are extremely moist and flavorful. I presume the skin helps keeps them that way, which means the only problem (if you want to call it as suck) is that you should likely use the entire bulb once unwrapped. For me, that is not a problem, as I LOVE to snack on these and the flavor lingers for quite a while. The intense savory/umami aspect blended with a caramelized sweetness and tones of garlic that makes this impossible for me to resist. The depth of flavor these bring to any dish is outstanding. However, the softness makes using it as an ingredient a little difficult. If the prep bothers you, the same company also makes a black garlic paste. It is just a matter of personal preference.
