Unbleached, unbromated, organic AP flour with 11.7% gluten - a reliable performer
This flour is what flour should be - the wheat is naturally aged instead of being artificially speed-hardened by adding bromine (like in most supermarket flours.) It's lovely to bake with, it hydrates well. Such a large, 50lb box divides well into "bagel shop" plastic bags, at around 3-4 lbs per bag. This is exactly the amount we need to refill an empty kitchen jar. We then store the bags in two 5-gallon buckets with snap-on lids. It lasts us almost a year, even with our frequent bread and cookie baking. The flour arrives in a sturdy cardboard box, within which you will find an industrial-strength plastic bag. We never had any spillage, but there is a trick to moving your flour into your bags: - Line your empty flour jar with a plastic bag, with twist ties handy. - Fill the bag as much as you deem fit. - Press air out as much as you can, then twist the bag and close with a zip tie. - Remove from your flour jar and deposit in a clean plastic bucket for long-term storage. TO OPEN THE FLOUR BAG: - Find a work surface (I use the top of our basement chest freezer for the whole process.) - Open the box. Using a utility knife, score a line in the middle lengthwise. Then do 2 more cuts at each end, it should look like two letter Ys, with the arms reaching into the corners. - Peel the long sides of the cut paper to the sides of the box, revealing the compressed flour beneath. - Carefully remove with a 1 cup measure or with a suitable scoop. Good luck! This process takes about half an hour. It's well worth it. We don't buy other flour anymore.

Excellent flour
I got this 50lb bag of flour to use at home. I was able to fit it in a 5 gallon food safe bucket and several empty Folger's coffee cans. I did not know if it would stay fresh long enough to use it all. It did. In fact, it was delicious flour. I feel it was superior to the small bags of flour I have been getting at the grocery store, some of which I would discover were stale when I got home. This flour was fresh, and smelled fresh when I opened the bag and dumped it in the bucket. I had to find several coffee cans to hold the remainder, as I was surprised how much was actually there when I started dispensing it. It seemed to fluff up as it came out of the bag. I had to tamp the bucket for while to get it to settle. There was enough to fill a 5 gallon bucket and 4- 40oz coffee cans, plus enough left over for several batches of biscuits that I put in my flour container on the counter. But I have been eating all sorts of bread for months and the flour is still fresher than what I get in small bags. This is really good flour and I will be buying it again, much to my UPS guy's dismay. He was grunting when he set it down on my porch. It's why I give him a Christmas card. :) * Purchased a bag in Feb of 2023 and I just finished the bag today, in October of 2024. The flatbread I just made was delicious. The flour was still fresh and made flatbread that has a rich, fresh flavor. Small bags of flour from the grocery store always produce bland, commercial tasting bread products. The screw top, food grade bucket kept the flour fresh for 18 months! I've given up trying other brands, as they are never as good as this flour.

Buying Bulk Truly Safes $$$
It was challenging to find 50# sacks of Unbleached Flour anywhere in our rural county. Expensive & usually not available. I decided to try online with King Arthur Sir Galahad brand, which I'd purchased in smaller quantities. Not only was it Unbleached but no GMO Flour or Bromides! Now it's my standard way to buy flour. I cook/bake a lot from scratch. The sacks are doubled heavy duty paper & well sealed. When delivered they've always been put in protective plastic bags, so no rain, snow or bugs can get inside. We live on a half mile long road, so they deliver & leave for us to pick up. They always notify us of delivery, so we go down promptly. Price is alot better than in local stores. Good quality flour.

Worth it
After an extensive search, this is still the least expensive. Although shipping is free, you are paying it in the cost of the item. King Arthur is my go-to flour, but I wish California was closer to Vermont.
