Can this be used to make clear glaze for fruit tart?

Most likely it can be used in a glaze. We have not used it for that as yet.

It is a modified corn starch so it has no Gluten. Good Baking!

Can you use this to stabilize whipped cream?

We have only used this product to thicken fruit pie filling. We stabilize whipped cream with unflavored gelatin. We have not used this for whipped cream.
