Can you set this to beep every 10 minutes over the course of 8 hours?

Press START, press SET, press up or down key to set first number to 10, press SET, use UP or DOWN key to set second number to 10, press SET and use UP or DOWN key to set bottom left number to 48, ie 6 beeps per hour for 8 hours = 48 beeps and away you go. BRGDS

Could this be used as a silent reminder in my pocket at work - for Physio exercises I need something that will vibrate discretely every 15 minutes

Yes during SET UP use V instead of B or BH or BL. The Beep is quite quiet and can be missed in the street by traffic noise, the vibration feels quite strong

I'd like to use this for circuit training and need it to beep at 2 min, 1 min and 30 secs, will it do that?

I believe I read your question wrong initially. I read it to mean you wanted three intervals. 2 min, 1 min and then 30 seconds. If you only want two intervals, 2 min then 1:30, this timer is capable of performing that.
