Does this fit the sharpener in the knife block?

This is a replacement ceramic wheel for the hand held sharpener or the sharpening unit in that fits in the slot on the knife block. If you need the complete sharpening unit for the knife block you will find it on ebay

Does this work as a replacement sharpener for the signature block with built in sharpener?

If it's the same as ours - yes. We'd had it for ages before discovering that the front cover comes off to reveal the sharpener. You may find that rotating the sharpener 180 degrees extends its life a bit.

Hi, do you receive one or two wheels?

It is only a single 'wheel on a spindle. It does look like 2 wheels in the picture, but it is a single piece with a groove in it. When mounted in the sharpener body, a knife blade is presented at an angle in the groove, and this is what grinds an edge on the blade. I have replaced the wheel only once, and it does wear out rather too quickly and become ineffective at sharpening. Have now given up completely with this sharpener and replaced it . Too expensive to keep replacing the wheels so often. Good luck.
