Review: Wusthof Classic 17cm Oriental Cooks Knife - I have had this knife a few months now and I love it, it is a great size, not too heavy and is very Versatile, I use it for cutting/chopping everything! (except bread) It has stayed sharp and the hollow edge helps stop things sticking to it when cutting. It is very expensive but I guess you get what you pay for. I also have Wüsthof CLASSIC Cook's knife - 4572 / 20 cm this knife is a little heavier but is also a great all-rounder.

The bevel is narrower than a traditional knife which means it can also produce really fine slices. Nicely balanced so also easy to use for delicate work as well as big chopping jobs. Great knife.

**Q: What is the weight of this knife in grams?**
A: Just weighed mine. Goes in at 173 grams.Hope this helps. Great knife

**Q: Will I receive the old model as pictured or the new model post 2020 logo change?**
A: I don’t know if it’s me, mine was looks like not wusthof at all. Very different to what i bought from online retailer.

**Q: Can this knife be sharpened with the normal Wustoff knife sharpener or does it need to be sharpened with a whetstone?**
A: There is a difference between " sharpen" and " honed". Each time you use the knife you should hone it on a steel ie the Wursthof. It keeps the blade in line and true and makes very light work of cutting. It will eventually get blunted and then needs sharpening. A tricky process look on YouTube.  Would recommend getting a professional job  about £7 per knife.  Hope this helps

**Q: I have purchased expensive knives in the past that have rusted very quickly, I know that this is a trusted brand but is this knife reliable?**
A: Mine shows no sign of rusting.  I always rinse the blade in very hot to boiling water and dry quickly with a cloth and leave out - still very warm - to air dry before hanging back on the magnetic strip holder.  This is how i treat all my knives and never have a rust problem.  I don't use knife blocks.

I have had this knife a few months now and I love it, it is a great size, not too heavy and is very Versatile, I use it for cutting/chopping everything! Good quality and very sharp knife. Be careful when sharpening as the blade needs sharpening at a different angle to other Wusthof knives. Most Wusthof knives need regular honing and occasional sharpening at a 15 degree angle. Wusthof Santoku knives need to be sharpened at a 10 degrees angle.
