No this chocolate is better for making candies. You could dip apples if you wanted to but you may want to ad some coco oil to thin it out a bit.

How do you keep it from melting in shipping during summer months?

I ordered the chocolate during the winter; however, because of the shipment issues that I had with the delivery carrier and the fantastic customer service reps, I am confident that they will package the chocolate in a manner that will reserve consistency and freshness during shipping in the summer months. Your best bet is to contact them directly to determine if it the summer months are optimal shipping times.

What are the percentages for?

The percentage is how much of the chocolates weight comes from the actual cocoa bean. The higher the percentage, the less sugar or the more bitter the chocolate is.

I purchased too many and won't be making anything with these in the near future. Can these be stored in the fridge?

Those will keep just fine stored in the pantry, a cool dry place is ideal. Fridge not required.
