Is it toasted buckwheat (kasha)?

Hi. Yes it is toasted already. This already has that pleasant tan appearance that comes from toasting. You can also taste that it is toasted. You can of course toast it more if you like. My wife, from Russia, claims that this tastes exactly like the kasha that she ate as a child, because it is.

For simply cooking in a pot, what is the ideal cooking time? It was very overcooked in 15 minutes on first attempt.

I cook it for 15 minutes and it is fine for me. Next time try not to cover the pot & cook on very low flame & check after 10 minutes, or cook 10-12 minutes but keep checking .

Are these buckwheat groats toasted or raw?

Raw. Great deal. I am originally from Russia and can say that this one is perfect groats. Much better than American red mill buckwheat. The reason why they are dark is because people collect them late. This is raw.
