Can I use these for my bow and stern lines when transporting my kayaks with J-hooks?

These have a 75 pound rating which is really too light for transporting something as big as a kayak on top of a vehicle. I'd use something beefier. The pulley housings are plastic. From their description: "The hanging clips are perfect for hanging growing light fixtures, carbon filters, ventilation equipment, and more." ie. light weight items like plants and lights indoors. They are fine within their specified load rating.

Is the end of the rope tied in a knot around the metal hook piece at the end, or crimped with a piece of metal to make a loop for the hook?

The carabiner opens to affix the pulley system to the object you’re lifting/securing. One end is affixed to an immoveable object while the other end is affixed to your moveable load. The stainless steel hook (carabiner) opens to accommodate a ring or whatever to attach it to the pulley system. For the 1/8” systems, the snap latch in the carabiner will open wide enough to slip probably a 1/4” rope through the opening. Or you may thread the rope through the opening. The latch is useful when attaching to a larger rope or a 1/4” or smaller ring. In the tie down mode both ends are immoveable, and the ratchet makes the line taut to hold whatever is under the line is secured. VBNE1?

will these work with bird feeders?

They sure will. As long as your feeder is able to hang in balance on 1 line or has multiple attachment points to keep it stable.

Can I replace the rope with one of my own length

Yes. I replaced mine with longer ropes of the same diameter and it worked perfectly.
