What alloy is the cutting edge? i notice this set does not advertise vg10 whereas other sets do.

Don't know but knives are good so far.

What angle is the knives edge?

I returned them because I wanted Japanese knives and this were from China. I saw they were sharp as heck and the edges were all the same. I'm sorry I'm not too schooled in edges.
