Does this sit on top the rubber mat that came with my record player, or just totally in place of?

Replaces it. Should sit on top of the metal platter. FYI type of mat impacts sound quality. I bought this because my original was old and needed replacing - it was expelling an oily substance that would ruin my records. It was rubber and I preferred its sound over this new acrylic one, which is still good and in my price range. It is all a matter of preferences - I feel rubber gives better bass. This is not a slip mat used by DJs for back que and scratching.

How thick is this mat?

It's pretty much the same thickness as a 180 gram record.

Is it hard or soft? Does it bend or is it stiff?

It's more hard then soft. It can bend. But it's a decent mat.

Can this platter be used with a technics sl 1200mk7 turntable?

I'm using this on a Technics SL-1200 MK2 and i can tell it surely made a difference sound wise.
