they have an on board toggle switch. If that were left switched on i see no reason why they couldn’t be wired through a separate door switch.

How do you connect the wires to the poles?

I assume you mean electrical poles. Crimp, solder or what ever other electrical connection system you wish to use. WAGO connectors are very simple and effective.
