I'm a mens 11 would these work?

It will certainly work and work WELL. My husband is 10.5 EEEE in a new balance & a mephisto. actually he is a 5E but they only make shoes to 4E & 6E. He has stretched lengths on 10's to 10.5 & the widths also. Make sure to dampen the inside w/ 50-50 alcohol water & crank daily for a few days.

How do I use this to make the top area of the toes higher in the shoe?

I think the best answer is to contact the manufacturer for an answer. The trick here is how to use a width stretcher as a toe top stretcher. The first question is how to hold the width stretcher in place while trying to stretch the toe area. The width engineering isn't there to do that. The manufacturer just might have something on the back shelf that can stretch the shoe toe area. A black wedge comes with the width stretcher and using work arounds and modifications you might get the wedge to do what you want...with difficulty.

Can it widen the back of the shoe?

No, these aren't designed to widen the back of the shoe.

Has anyone used these to stretch heel only (toes ok ; tight heel).?the shoes are 11m , and it's the heel section that feels tight/rubs.
