First time ever making homemade pasta! Because I wanted Einkorn fettucine which nobody sells (and TBH store bought Einkorn is very expensive). I made 3C (360g) Einkorn flour plus 3 eggs (170g) but I needed to add a little water at the end so next time 4 eggs I think. I cut into 4 but ended up processing 1/8 at a time, using first 1/8 to run through and "clean" all the rollers but I didn't see any dirt or machine oil. So I did not use the entire width which I think eliminated some of the dirt or machine oil problem some people have. This just made it easier for me. I rolled down to #3, then cut. When I cook it I'll see if that was too thin. No trouble with cuts, it was flawless. I didn't bother to square up my strips. I did notice a larger width or not starting in center the strip would travel. Understandable, this is not a precision machine. It seems very sturdy, it did not move while I worked and this was pretty fun. Not too terribly time consuming, maybe 2 hours total start to finish and I was a total newbie. You need a drying rack or the whole countertop to spread things out for sure. Anyway I am super pleased with the machine, I read lots of other reviews first and performance vs cost IMHO this was the best choice and I am very pleased. Note: the handle goes in to whichever roller you are using. FYI it doesn't lock in or anything so it can fall out. The main roller came set at the thinnest (#1). It is strong enough to compress thin wood veneers to a precise thickness. ### ⭐⭐⭐⭐ Works great, simple. *by T***Y on March 20, 2023* Initial reaction was that I was annoyed when I opened the box because the machine was dented in a few places. These dents have no effect on the quality of the pasta this can produce, but I don’t feel like I’ve earned this amount of “character” so quickly. Cut to the chase- excellent machine, easy to use. You have your rollers to roll out the dough before cutting (great, nothing to change here). However, there are two cutting options (1 for a linguine/fettuccine and 1 for spaghetti). You can’t adjust the width of either of these, so you have to go off of the thickness of your dough. I was hoping you could adjust the width of these cuts but you can’t. Not sure if this is standard, but it’s just not what I had in mind. If you can make dough, this machine will do the job. Super easy to use, mostly easy to clean- after making pasta I let the machine sit for a couple days, then any leftover dried pasta I pick out with a wooden skewer. There is some machine oil in the bearings, so as the instructions say, run some scrap dough through each part a few times before using.
