Great knife!
I have now had this knife for over 6 years! I am very impressed with it and have grown to prefer it over my zwilling profession s (granted 8inch vs this one at 6inch). I am kind of a knife guy. Very impressed with the balance, weight, feel and cutting. I sharpen tools for my woodworking and this knife takes an edge very nicely on resharpening. For the money, its amazing in my opinion.

Excellent knife, great price!
Very well made, sharp chef’s knife. Has quickly become my “go to” knife in the kitchen. Handle is comfortable and robust. Works well, with my large Hands. Price is very reasonable.

Great value.
It is not a four hundred dollar individually hand forged knife. But it performs way above its price class. This is the 6inch chef knife. I have an 8 inch. made in Japan, that I did pay close to $400. But I am not ashamed to use a five dollar plastic handle paring knife in my kitchen. I wanted a shorter knife for general purpose slicing and chopping. I have a Mercer M24307PL that works great, but it is a bit longer than 6 inches, and is a Japanese style utility knife, sharpened on one side only--the wrong side for a lefty like me. This one M20606, is a true Western style 6 inch chef blade (more curve and ends with a point) with a good gripping rubberized handle, comfortable to use with a pinch grip. I don't know what the complaints about sharpness are about. This one sliced paper in repeated narrow curved strips and dry shaved the hair on my arm.right out of the plastic display wrapper. The blade is marked high carbon German steel, x50CrMo v16 and the NSF seal. A much better knife than what you get with the famous German brands for less money.

best top shelf home cook knife
These are fantastic home cook knives. They are the ones student's in culinary school are at minimum required to have and they are wonderful. I love wood handles but its totally worth it to have black plastic or whatever it is. they feel noce in your hand and stay sharp even with a regular old knife sharpener from homegoods. I love to cook and a sharp knife is safer than ine that goes dull. Totally worth it

I like this knife!
I cook at home, so I’m not using it in a professional environment, and I’m not a “chef”. So take this for what it’s worth. But after a month of owning it, this has become “my knife”. I’ve been using the same 3 knives for More than 20 years. It was my 8” chefs knife that did the lions share of the work. But it was beat. So I started looking around for something new. I had the odd thought of trying out a 6” one. So I ordered a couple to try out. I kept swapping around for a couple weeks, and the Mercer ended up being the one I started grabbing more and more. It’s all about the way it fits my hand. And I’m liking working with a 6” blade. For me, confidence in cutting comes from how the knife feels. And for me, this one feels really good. I like the handle, and it feels solid even when my hands are wet or damp. It’s holding an edge just fine, and I feel confident using it. I’m actually surprised I ended up liking working with the 6”, and I have a longer carving knife and shorter paring knife, so this ended up fitting in well. Now, this is a very short term review so far. I’ve only owned it for a month, and for almost 3 weeks of that, I was using it part time to figure out which one of the three I was testing would end up being the one I used. But I think it’s going to be fine longer term. UPDATE: 3/3/2021 - So now that I've been using this knife for a couple more months, I wanted to update this review. I still really like this one, and it is still my main knife. But it didn't totally replace my 8" knife. I'd say I use this one about 80% of the time. It's a great size, and has kept an edge well (obviously I sharpen it). There are just some things that are easier with a bigger knife. At first I was trying to have those work with the smaller one, but I found that wasn't practical. So 80% this one, and 20% my old 8" knife. And that just works for me. Overall it is holding up really well.

Excellent knife
We needed something between paring knives and the huge Cutco butcher knife and this knife fits the bill perfectly. It is excellent quality, has good balance and is extremely sharp. I would highly recommend this knife and would buy others of this same brand.

Great - Would Buy Again
I own multiple Mercer knives and I am not disappointed. I use my knives, I sharpen my knives and they have held up over the years. They hold their edge provided right angle. I have been in multiple large scale kitchens and I see Mercer knives all over so value, durability and performance are there. Don't waste your money on other options if you want something that works and works well - buy this instead.

Great quality all around
I've had this knife since 2019, its the only knife I use when cooking. It still looks new, still has a sharp edge and cuts good enough for me. And I complain about a lot of things. I do not do anything extra for it. I use it, rinse it, and a simple sharpen from time to time. Its a great knife. The price may seem a bit high for a knife but it's definitely worth it. You will pay more in the long run replacing cheap knives. Quick story. My mother has a drawer filled with knives all different kinds. And they're all terrible. This one knife replaced them all.

Wow. Fed up with having blunt knives and decided to spend more on a hopefully decent one. Not disappointed, it is SHARP, can cut thin slices of tomatoes and lemon. Really nice feel and weight. Going to buy a smaller one from the same range. Why have I waited so long!?

The Mercer 6” Chef’s knife has a good edge, cuts well without bias, and feels balanced and comfortable in the hand. The absence of rivets in the handle is a great plus point for me. Hand wash it only, never ever in a dishwasher. The steel is good quality and if the claimed alloy has been used then it will keep its edge much longer than a more old fashioned blade. Always use a proper whetstone or sharpening steel to dress the blade. Out of the box it cut though a tomato under its own weight, one of the ultimate tests for how sharp a blade is. Trimming a steak was easy, fat and gristle were banished in a twinkling. I like this one.
