Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global also makes a "heavyweight" line for cooks who prefer hefty knives, its original knives--of which this 8-3/4-inch bread knife, with a scalloped edge for slicing crusty loaves, is an example--have thinner blades and are lighter than traditional European-style knives. Global also dispensed with bolsters on its original knives to reduce weight. Balance is achieved by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a blade is maneuvered. A finger notch between blade and handle provides safety. Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Review: Great Knife! - I ordered a Global Santoku knife a while back from a recommend in a knife forum. Turns out it was a great knife, and it quickly became my wife’s favorite kitchen knife - we had Zwilling/Henkels for the most part before I got these. They’re light weight, keep the edge for a reasonable amount of time (they all get dull, these commercials for the “world’s sharpest knife!” are silly, whack stuff up on a cutting board, go through some turkeys and roasts and it’s as dull as the $4 knife at the dollar store). They’re kitchen knives, so rust really isn’t an issue. They’re also lightweight (I believe on the bigger knives, the handle has a hollow cavity) – it’s all one-piece construction, so no handles coming off or getting damaged or destroyed by washing or leaving it too close to a burner. For Christmas I decided to replace all of our Zwilling/Henkel knives with Global knives. I ordered them à la carte – like everybody else, Global’s big sets had more than I needed and not enough of what I wanted, so if you see this review in multiple places, that the reason. Anyway, the 8.5” bread knife is very nice, functional and worth the money.

**Q: Is this the best knife for very crusty and heavy sour dough bread?**
A: Yes, it is for me.  It is a wonderful knife, easy to use and cuts bread and bagels with ease.  I love that is it light and balanced in my hand and is wonderfully sharp!

**Q: What is the width of the blade? I am looking for the dimension from the serrated edge to the flat side of the blade, at the widest point.**
A: 2 inches or 5 centimeters at widest dimension.

A: Land of the Rising Sun. The phrase "Made in Japan" is printed on the box. The word "Japan" is etched on the knife.

A: 8 1/2 from tip to rear most length of knife.......in a wood block if allowed more space will probably slide in extra half inch till handle widens.....but blade length definitely 8 1/2

### ⭐⭐⭐⭐⭐ Excellent Bread Knife. Powerful Long Serrated Blade

I love this knife. It was a pricey purchase, considering I began to make bread at home to save money and be in control of what goes into the bread I feed my family. But this knife makes slicing my loaves so enjoyable, it was worth it. The long Serrated cuts quickly cleanly. It doesn't squish soft bread or break up crusty bread. And it's so easy to get even slices. Careful though, the blade is super sharp! I love Global knives. This one had the great Global "dimpled" handle. I am really happy to add this bread knife to my growing collection.
