I read that real manuka honey is thick, Why is this manuka honey thin like regular honey?

True manuka honey is always of a thick texture whether creamed or not. Australian honey is not genuine manuka. It is made up of the nectar of many different varieties of trees from a family of trees, species name Leptospermum. Each tree and its nectar has different properties. New Zealand only has one species of Leptospermum called Leptospermum scoparium, hence the consistently thicker honey. New Zealand's indigenous Maori people named Leptospermum scoparium Manuka, and have used the tree for traditional health remedies for nearly 1,000 years.

You say it is "manuka" honey which designates a certain nz bush or is "jellybush" the same plant just the "normal" rivalry between nz and aussies?

Within the Leptosermum Genus, 'Jelly bush' honey comes from the Aussie Leptospermum polygalifolium, which is a different species from Leptospermum scoparium, from which you get ' manuka' honey. Yup, some overlap & similarities, BUT they are still different species & products ..... draw your own conclusions
