Can I leave the charger on and connected to my car battery over winter to maintain the charge?

Are the 7 stages supposed to light up? Some of the photos show red indicator lights, others don't..

I have only had to use my charger once, on a totally flat battery. I didn’t sit and watch it for the complete 8 hour charge time. You have to view at the correct angle to see the read out clearly (walk round it til it’s perfect) . It appeared to be entirely automatic and it will run through all necessary stages and tell you when it’s full and ended.. this might be an hour or two after you thought it was done. It starts with the blip charge to check it, then repair mode if necessary, then it just gets on with charging. I fully recommend it, but be patient! Ged

Can you charge by only using the red terminal on the battery and black clip on the engine block as I cant reach my neg terminal on battery?

Yes red to + you can connect the black to metal and it will still charge

How do I set it to trickle charge for my car?

That is automatic once the battery is full.
