What is thr thickest material you can hold down

It depends on how you mount the toggle clamp and adjustment of the locking screw. I have adjusted the toggle clamp to hold down 1/8 stock to 3” block using an additional mounting block. It is versatile and with good mounting block/bracket it can be adapted for robust clamping. Useful hold down tool for the shop.

Can you purchase longer posts for these seperately?

You can replace the posts with pieces of threaded rod in any length.

Excellent value

These clamps are inexpensive and useful, and are perfect for jigs. I've used them to leather cutting jigs, for shooting boards and other contraptions that need a semi-permanent hold. The price allows them to be placed on a jig or item you don't use all of the time, and they work just fine.
