If I plug in headphones to this adapter will I be able to use the microphone on said headhpones to communicate on my phone?

You should be able to, as I use a Bluetooth headset while listening to music to make phone calls.

Does the adapter work well with Andriod Auto when connecting to car?

I haven't use it with Android Auto. I mainly used my headphones and adapter while travelling by plane or at home.
