Since 1850, Emile Henry has produced in France a large range of high quality ceramic cooking utensils. With a 10 year guarantee, our products are made from natural materials and have been designed and manufactured in France, in Southern Burgundy. Controlled production, without waste, is part of our daily commitment: the CO2 expelled from our workshops is particularly low thanks to our modern firing techniques that require less energy. I use the book Flour Water Salt Yeast and it mentioned Emile Henry pans. So I finally decided to try it. Wow what a difference. The first loaf came out perfectly. Now they all do and I don't need a new oven!!! So excited to share my bread without being embarrassed over the bottom. Cookie sheets and baking stones didn't make a difference with my Dutch ovens. Now I don't need them either

### ⭐⭐⭐⭐⭐ Great bread-baker

Bought this on the recommendation of Jim Lahey, whose no-knead bread recipe is my favorite. I am getting older, and the cast-iron Dutch oven I have been baking that bread in was getting very heavy. This is much lighter, and does the same fabulous job of holding in steam to create a crisp crust. I preheat the vessel (and top) with the oven, so it heats up gradually. Then place the dough in the hot pot, cover it, and let it bake with the cover on, then take cover off at the end to brown further. I rolled the dough in rice flour for proofing in a bannaton, and sprinkled the bottom of the heated pot with cornmeal before plopping the dough into it, and had zero sticking.
