what does unloader come set at by default?

They are not set coming from the factory. I would recommend you to get a gauge and adjust the unloader once you have installed it. We will be glad to help you out with that.

I'm looking for a white spring unloader, can I just swap out the the blue spring white one?

There is no White spring used in the VRT series so we could not speculate if this spring would work with the VRT .
