Can this sensor work with an ESP32 and esphome?

Hello! It can be used with ESP32 and esphome, it's just that we don't have example test code at the moment. Buyers need to have a certain ESP32 application coding foundation, test and write code by themselves.

Can the probe be fully submersed? And if so, for how long? Indefinitely?

Hi! The TDS probe and lead are made of waterproof material and can be immersed in water, but the cable interface and signal transfer board are not waterproof, please use it with caution. Is the sensor able to be plumbed into water line? a number of tds sensors will directly fit in a 1/4" push connect fitting.

The probe and lead of the TDS sensor are made of waterproof material, which can be inserted into the water pipe and installed in the 1/4" push connection fitting, but make sure that the water temperature in the water pipe does not exceed 55 degrees Celsius, because the probe cannot be used in water above 55 degrees Celsius.
